Chicken, Chickpea and Cashew Nut Curry – 500 Calorie Meals


  • 600g of Chicken Breast
  • 1 Large tin of Chickpeas
  • 40g Cashew Nuts
  • 1 Tin of Chopped Tomatoes
  • 40g of Medium Curry Powder
  • 1 Onion
  • 1 Sweet Pepper
  • 1 Courgette
  • 1 bag of Spinach
  • Olive Oil
  • Basmati Rice


Slice chicken breast and vegetables to preference. 









Heat 1 tblsp of olive oil in a Wok, add chicken breast and brown for 5-10 minutes. 









Once the chicken is browned add in your mixed vegetables and cook until slightly soft. 









Add in curry powder and mix until all contents of the Wok is covered. 








Add in one tin of chopped tomatoes and allow to summer for 5 minutes. 











Rinse the tin of chickpeas of cold water and drain. Add the full bag of spinach, 40g of cashew nuts and chickpeas to the curry and allow the spinach to wilt down. 








While the curry is cooking boil 250g of basmati rice for 10 minutes.

Carbs: 60g

Fat: 10g

Depending on your total calorie intake per day this portion size may be just right or too small. If you desire to increase the calorie content double the amount of rice (250g to 500g raw rice) and cashew nuts (40g to 80g) to give you the following nutrient values: 


Calories: 790

Protein: 53g

Carbs: 111g

Fat: 15g
