- 500g Lean Beef Mince (5% fat from Dunnes Stores)
- Basmati Rice
- 1 Courgette
- 2 Bell Peppers
- 1 Packet of Fine Beans
- 1 Onion
- 1 Carton of Passata
- 1 tin of Kidney Beans
- Mixed Herbs
- Hot/Medium Chilli Powder
- Vegetable Oxo Cube
- Instant Coffee
- Olive Oil
Add 1 tblsp of Olive Oil to a hot pan, cook you onion until soft, add you mince a cook until brown.
Finely chop and add all your remaining vegetables. Vegetables used are only suggestions, feel free to get creative, the more variety and colour the better.
Add in the passata, kidney beans, 1 tsp of mixed herbs, paprika and chilli powder. Salt and pepper to taste. (Adjust amount of Chilli Powder as desired).
Top Tip! Add 1 tsp of instant coffee and simmer for 10 minutes.
Boil 250g of rice for 10 minutes while the Chilli is simmering.
This recipe makes 4 servings. Ideal for cooking for a group or for meal prep on a Sunday for lunch or dinners throughout the week.
